The Restaurant at JUSTIN is seeking a full-time Commis (Prep Cook) to join the team! A Commis (Prep Cook) is responsible for all culinary dishes that are prepared in their section as well as basic prep for the Chef de Partie’s. This person must be very knowledgeable about his or her specialty, as well as culinary functions in general. A person in this role must also be very organized and comfortable working in a high-pressure environment. This candidate must also be able to give orders within their section, as well as reliably carry out orders handed down to them by the Sous Chef and Head Chef.

Job Description

  • Prepare, cook and present culinary dishes requested by the Chef team while maintaining strict health and hygiene standards in the kitchen
  • Assist with daily kitchen prep work and station set-up before service and maintaining the highest quality food preparation standards.
  • Receive, check-in and put away deliveries using FIFO standards
  • Communicate with supervisor for support to troubleshoot problems
  • Organize and manage the preparation of mis en place and production related to the kitchen and their station and communicate product needs to the supervisor
  • Read and follow cooking directions and recipes
  • Complete multiple tasks at a time efficiently
  • Prepare cheese plates
  • Support the Restaurant with prep & execution of Events, lunch/dinner when needed
  • Support production for JUSTIN Grab and Go culinary program (jams, pickles, crackers other food items made in bulk).
  • Wash dishes and equipment as needed

Qualifications

  • Minimum 6 months of culinary experience and knowledge of fundamental cooking techniques
  • Knowledge of kitchen equipment operation including slicer, food processor, griddles, french tops, ovens, burners, mixer, knives
  • Be passionate about food and wine
  • Food Handlers Card
  • Demonstrate a strong ability to work well under pressure and thrive in a fast-paced working environment
  • Ability to establish direction, obtain commitment and execute appropriate logistical processes
  • Comfortable assisting guests and purveyors daily
  • Strong time management, organizational skills and exceptional attention to detail
  • Have a calm and approachable demeanor
