The Jr. Sous Chef is responsible for all culinary dishes that are prepared in their section/ department focus. Because of this, a successful Jr. Sous Chef must be very knowledgeable about his or her specialty, as well as culinary functions in general. A person in this role must also be very organized and comfortable working in a high-pressure environment.

A Jr. Sous Chef must also be able to give orders within their section, as well as reliably carry out orders handed down to them by the Chef de Cuisine and Executive Chef. A successful Jr. Sous Chef is accepting of constructive criticisms and has a desire to grow one’s culinary and professional skill set and that of their team.

The work schedule is Thursday – Monday (8:00 AM – 4:30 PM). This position is based at our Estate: 11680 Chimney Rock Road, Paso Robles, CA 93446.

Job Description

  • The Jr. Sous Chef’s primary role is to oversee the preparation and cooking of food at The Restaurant at JUSTIN
  • The Jr. Sous Chef will work in all stations for lunch service, manage daily kitchen prep work and station set-up before service, and maintain the highest quality food preparation standards
  • Preparing, cooking, and presenting culinary dishes; enforcing strict health and hygiene standards in the kitchen; and troubleshooting any problems that may arise
  • Communicates with The Farmstead with regards to needed products
  • Supporting teammates in managing their time, prep, and mentoring the quality and efficiency of work
  • Supporting the ordering and inventory control and ensuring that needed ingredients are ordered
  • Training lower-level staff in their department and holding them accountable
  • Maintaining organization of walk-ins, dry storage, and other kitchen storage areas
  • Work with the Chef and Chef de Cuisine to create seasonal-appropriate dishes
  • Supports the Restaurant with prep & execution of Events and Lunch

Qualifications

  • 2+ Years Fine Dining Culinary Experience
  • Culinary Degree Prefered
  • Serv-Safe Certified
  • Demonstrated strong ability to work well under pressure.
  • Ability to establish direction, obtain commitment and execute appropriate logistical processes.
  • Comfortable in Dealing with Guest and Purveyors daily
  • Exceptional attention to detail, and passion about food
  • Must thrive in a fast-paced working environment
  • Have a calm and approachable demeanor
  • Superb time management and organizational skills

Pay Range: $26.00 – $29.00 an hour. Final compensation will be dependent upon skills & experience.
