Responsibilities

  • Assist in the creation and implementation of menus.

  • Write descriptions for all menu items.

  • Contribute to research and development efforts for menu innovation.

  • Design daily specials in line with the established concepts.

  • Support the creation of menus for various events and purposes.

  • Order supplies to maintain par levels in accordance with the mise en place and menu descriptions.

  • Ensure daily rotation of mise en place to guarantee 100% freshness.

  • Maintain the standards set for all menus.

  • Coordinate the development of opening and closing procedures.

  • Develop job descriptions and Standard Operating Procedures (SOPs) to ensure quality and efficiency.

  • Oversee mise en place operations, including setup, scheduling, ordering, and receiving.

  • Communicate effectively with colleagues, management, and both front- and back-of-house staff.

  • Participate in and lead meetings, including daily communication, service meetings, culinary lineups, chef’s meetings, weekly staff meetings, and monthly department meetings.

  • Maintain sanitation and HACCP documentation, adhering to California and LA County health codes.

  • Ensure cleanliness across all food and beverage departments.

  • Guide and support the team to meet and exceed guest satisfaction goals.

  • Prepare weekly schedules according to forecasts.

  • Manage food, labor, and operational costs efficiently.

  • Relieve cooks and chefs during various shifts as needed.

  • Listen actively and thoughtfully before taking action.

  • Communicate both popular and unpopular content effectively.

  • Use the associate handbook and CoralTree philosophy to coach employees.

  • Foster professional working relationships with all Terranea Resort associates.

  • Motivate associates and maintain a cohesive team environment.

  • Ensure accurate maintenance of the menu and recipe database.

  • Perform other related duties as required.

  • Be supportive to the team, continuously learning and teaching.

  • Serve as an ambassador for both the outlet and Terranea Resort within the community.

Qualifications

  • Strong customer service aptitude.

  • Excellent verbal and written communication skills.

  • Ability to implement and uphold service standards.

  • Strong organizational and prioritization skills.

  • Ability to interact with both associates and guests.

  • Ability to thrive in stressful, high-pressure situations.

  • Ability to exert up to 50 pounds of force occasionally and lift, carry, pull, or push up to 30 pounds of force regularly.

  • Ability to stand or walk for extended periods of time.

Experience, Education, & Licensure

  • At least 1 year of culinary management experience.

  • A minimum of 5 years of experience in culinary arts in an upscale restaurant, hotel, resort, or club setting.

  • Proficiency in speaking, hearing, understanding, reading, and writing in English.

  • Culinary Arts degree preferred.

  • Serve Safe, Sanitation, and HACCP certification required.

Compensation

  • Base pay: $68,640 – $72,000 per year.
